Sonker is a local dessert similar to deep dish pie or cobbler. Sonkers helped feed the often large farming families frugally by using their own produce. Commonly used are peaches, apples, blueberries, blackberries, cherries, pears, strawberries and sweet potatoes. The unshaped dough is sweetened with sugar or sorghum cane molasses. The dessert is sometimes accompanied by a dip (glaze) made of cream, sugar or molasses, and vanilla extract. The origin of the name, however, has been lost to time.
